Dedication
This recipe is made with silver beet my father loved and grew with his own hands.
Though he is gone, the silver beet still grows on its own — a quiet reminder that love never truly leaves.
Ingredients
Silver beet (washed and chopped)
Potatoes, peeled and chopped
1 onion, finely sliced
1 egg
Grated Parmesan cheese
Grated Cheddar cheese
Black pepper, to taste
Dried thyme, to taste
Olive oil or oil for frying
Method
Boil the potatoes and silver beet separately until soft. Drain well.
Fry the sliced onion in a little oil until golden and fragrant. Set aside.
Mash the potatoes until smooth.
Add the cooked silver beet to the mashed potatoes and mix well.
Stir in the egg, fried onions, Parmesan cheese, black pepper, thyme, and some grated Cheddar cheese.
Mix everything gently until well combined.
Transfer the mixture into a greased baking dish.
Top generously with more grated Cheddar cheese.
Bake in a preheated oven at 180°C (350°F) until golden on top.
Remove from the oven, let it rest slightly, and serve warm.
